Matcha & Benefits

What is Matcha?
Matcha is a premium, finely stone-ground green tea powder made from specially grown and processed Camellia sinensis leaves. Unlike traditional green tea where you steep the leaves and then discard them, matcha involves whisking the powder directly into hot water or milk, allowing you to consume the entire leaf.
Originating from Japanese tea ceremonies, matcha is renowned for its vibrant green color and high concentration of antioxidants, specifically EGCG catechins. Because the tea plants are shade-grown for several weeks before harvest, matcha contains elevated levels of L-theanine and caffeine, providing a calm, focused energy boost without the typical coffee jitter.
Why matcha over coffee?
While both beverages provide caffeine, matcha is often preferred over coffee because it offers a "calm-alert" state rather than a sudden energy spike. Here are the key reasons why many are making the switch:
- No Jitters or Crashes: Matcha contains a unique amino acid called L-theanine, which slows the absorption of caffeine. This results in a sustained energy boost of 4 to 6 hours without the anxiety, jitters, or the "afternoon crash" typically associated with coffee.
- Higher Antioxidant Profile: Matcha is a powerhouse of catechins, specifically EGCG (epigallocatechin gallate), which helps combat oxidative stress. One cup of matcha can provide the antioxidant equivalent of up to 10 cups of regular brewed green tea.
- Enhanced Focus and Metabolism: The combination of L-theanine and caffeine improves cognitive function and concentration. Additionally, matcha has been shown to naturally support thermogenesis, helping the body burn calories more efficiently during exercise.
- Better for Oral Health: Unlike coffee, which is highly acidic and can stain teeth or cause "coffee breath," matcha is more alkaline and contains natural antibacterial properties that promote healthier gums and fresher breath.
What is L-Theanine?
L-theanine is a unique, non-protein amino acid found almost exclusively in the tea plant (Camellia sinensis) and certain types of mushrooms. It is the primary compound responsible for the savory "umami" flavor in high-quality matcha and is highly valued for its ability to promote relaxation without drowsiness.
When consumed with caffeine—as it is naturally in matcha—L-theanine performs a "synergistic" effect. It modulates the brain's alpha waves, which are associated with a state of relaxed alertness, while simultaneously smoothing out the stimulatory effects of caffeine. This process provides several key benefits:
- Alpha-Wave Induction: It increases alpha brain wave activity, putting you in a state of "flow" where you are calm yet highly focused.
- Caffeine Modulation: It slows the absorption of caffeine into the bloodstream, preventing the jitters, heart palpitations, and the sudden "crash" often caused by coffee.
- Stress Reduction: L-theanine helps lower levels of cortisol (the stress hormone), supporting better mood and mental clarity during high-pressure tasks.
- Cognitive Enhancement: Studies suggest that the combination of L-theanine and caffeine improves reaction time, working memory, and overall cognitive performance.
What are the benefits of matcha?
Matcha is considered a superfood, a nutritional powerhouse, offering a significantly higher concentration of beneficial compounds than standard green tea. Because you ingest the whole leaf, the health benefits are magnified. Key benefits include:
- High Antioxidant Content: Matcha is rich in catechins, particularly EGCG (epigallocatechin gallate), which help neutralize harmful free radicals, reduce inflammation, and support cellular health.
- Sustained Energy and Focus: Thanks to the unique combination of Caffeine and L-theanine, matcha provides a 4–6 hour energy boost without the jitters or the "crash" often caused by coffee. This promotes a state of "relaxed alertness."
- Metabolism and Weight Support: Studies suggest that matcha can naturally boost thermogenesis (the body’s rate of burning calories) and enhance fat oxidation during exercise, making it a popular supplement for healthy weight management.
- Detoxifying Properties: High levels of chlorophyll, the pigment that gives matcha its vibrant green color, help the body naturally eliminate toxins and heavy metals.
- Heart Health: Regular consumption of green tea powder is associated with improved cardiovascular health, including helping to maintain healthy cholesterol and blood pressure levels.
- Enhanced Mood and Calm: L-theanine promotes the production of dopamine and serotonin, chemicals that can improve mood, memory, and concentration.
Where does your matcha come from?
Our ceremonial matcha is sourced directly from the most renowned tea-growing regions in Japan: Kagoshima and Aichi.
- Kagoshima: Located on the southern island of Kyushu, Kagoshima is famous for its nutrient-rich volcanic soil and mild climate. This unique environment produces matcha with a naturally sweet, mellow flavor and an incredibly vibrant green color, thanks to the high chlorophyll content.
- Aichi (Nishio): The Aichi prefecture, specifically the Nishio region, has been a hub for traditional matcha production for over 800 years. The pristine river water and misty climate of Aichi result in a matcha with deep, complex umami notes and a velvety smooth texture.
By sourcing from these two distinct regions, we ensure a perfect balance of flavor, aroma, and high antioxidant levels in every bowl. Our matcha is authentic Japanese stone-ground tea, harvested with the same dedication to quality that has defined Japanese tea culture for centuries.
What does ceremonial grade matcha mean?
Ceremonial grade matcha is the highest quality green tea powder available, specifically intended to be enjoyed whisked with water in its purest form. Historically reserved for traditional Japanese tea ceremonies, this grade is distinguished by its vibrant emerald green color, delicate "umami" flavor, and naturally sweet finish.
While the "Ceremonial" designation is not a specific termination for characterizing matcha, it is determined by several strict quality factors:
- First Harvest (Shincha): Authentic ceremonial matcha is made only from the youngest, most tender tea leaves picked during the spring first harvest, when nutrient and chlorophyll levels are at their peak.
- Shade-Grown: The tea plants are shaded for 20–30 days before harvest. This process boosts L-theanine and chlorophyll, giving the tea its brilliant green hue and reducing bitterness.
- Stone-Ground: The leaves (called tencha) have their stems and veins removed before being slowly ground by traditional granite stones. This prevents friction heat, preserving the delicate antioxidants and creating an ultra-fine powder that froths perfectly.
- Taste Profile: Unlike "culinary grade" matcha, which is bolder and slightly astringent for baking, ceremonial grade is smooth and creamy with zero bitterness.
How does it taste?
High-quality ceremonial grade matcha has a unique and complex flavor profile that is often described as creamy, floral, and deeply "umami." Unlike lower-grade green teas, premium matcha should never be unpleasantly bitter.
When you sip a perfectly prepared bowl of matcha, you can expect:
- Rich Umami: A savory, "brothy" depth that comes from high levels of L-theanine. This is the hallmark of authentic Japanese matcha.
- Natural Sweetness: A delicate, lingering sweetness on the finish, often compared to young snap peas or high-quality white chocolate.
- Vegetal Notes: Fresh, grassy, and "green" aromas that remind you of the spring harvest.
- Velvety Texture: Because the powder is stone-ground to a microscopic size (5–10 microns), it creates a smooth, frothy, and full-bodied mouthfeel when whisked properly.
- Clean Finish: A high-grade matcha from regions like Kagoshima or Aichi will leave your palate feeling refreshed and clean, with a gentle floral aftertaste.

What does the whisk do?
The traditional bamboo whisk, known as a Chasen, is a vital tool for preparing a perfect bowl of matcha. Unlike a metal spoon or a standard kitchen whisk, the Chasen is handcrafted from a single piece of bamboo with dozens of delicate, flexible prongs designed specifically for fine green tea powder.
Its main functions are:
- Aeration and Froth: The numerous prongs of the Chasen incorporate air into the tea, creating a thick, creamy layer of micro-foam (crema) on the surface. This froth traps the matcha’s aromas, making the flavor more intense and the texture smoother.
- Effective Dissolution: Because matcha is a suspension (powder mixed in water) and not a soluble tea, it tends to clump. The Chasen’s design breaks down these microscopic clumps, ensuring a clump-free, velvety consistency.
- Flavor Release: Whisking the matcha vigorously in a "W" or "M" motion helps release the tea's umami notes and natural sweetness, which might otherwise stay trapped in unmixed particles.
- The Ritual: Using a Chasen honors the centuries-old Japanese tradition, turning your daily caffeine boost into a mindful, meditative ritual.
What is the scoop for?
The traditional bamboo scoop, or Chashaku, is an essential tool for measuring the exact amount of matcha needed for a perfect serving. Crafted from a single piece of steamed bamboo, its elegant curved shape is designed to navigate the corners of your 30g BLOOM tin with ease.
Using a Chashaku serves several important purposes:
- Precision Dosage: One traditional scoop of the Chashaku is roughly 0.9g to 1g.
- Anti-Static Measurement: Unlike metal spoons, which can create static electricity that causes fine matcha powder to clump or fly away, the natural bamboo material keeps the powder stable and easy to transfer.
- Zero Waste: The narrow, tapered tip allows you to scoop exactly what you need without spilling, ensuring your 30g refill lasts as long as possible.
- The Ritual of Mindfulness: Beyond its utility, the Chashaku is a symbol of the Japanese tea ceremony, encouraging a slower, more intentional start to your day.
How to care for my tools?
For the whisk (Chasen):
Care:
- Briefly soak the chasen in warm water (not boiling) before using it. This will soften the tines.
- Rinse with water immediately after use. Avoid rinsing the handle with water.
- Let it air dry.
- Store it in your sating bag.
Use:
Put your energy in your ritual and do fast movements in a "W" shape without touching the bottom of the bowl. This will create air and dissolve the matcha powder, resulting in that creamy, soft feel when drinking.
For the scoop (Chashaku):
Our Chashaku was crafted to carry 1 gram of matcha, to make your ritual simpler.
After using it simply wipe with a dry cloth.
How to prepare matcha?
Why not water >80ºC?
Using boiling water (100°C) is the quickest way to ruin a high-quality matcha. Because matcha consists of the entire ground tea leaf, it is extremely sensitive to temperature. We recommend using water between 65°C and 75°C for the following reasons:
- Prevents Bitterness: High temperatures cause the rapid release of tannins, which results in a harsh, astringent, and bitter taste. Keeping the water under 80°C preserves the delicate L-theanine and natural sugars, ensuring that smooth, "umami" flavor BLOOM is known for.
- Protects Nutrients: Matcha is famous for its high level of Vitamin C and sensitive antioxidants like EGCG. Boiling water can degrade these heat-sensitive compounds, reducing the health benefits of your daily ritual.
- Preserves the Color: Extreme heat can "cook" the chlorophyll in the powder, turning your vibrant emerald green tea into a dull, brownish-yellow liquid.
- Better Froth: Water at 80°C has the ideal surface tension to create that thick, velvety micro-foam when whisked with your bamboo Chasen.
Quick Tip: If you don't have a temperature-controlled kettle, simply let your boiling water sit for about 5 to 7 minutes before pouring it over your matcha, or add a small splash of cold water to the cup first.
Can I make a latte with your matcha?
Yes, absolutely! At BLOOM, we offer two distinct grades of premium Japanese matcha, each carefully sourced from Kagoshima and Aichi to suit your daily ritual:
- Pure Ceremonial: This is our highest ceremonial grade, harvested from the youngest spring leaves. While you can make a latte with it, its flavor is so delicate, naturally sweet, and rich in umami that we recommend enjoying it pure (whisked with water) to fully appreciate its complex profile.
- Daily Ceremonial: This grade is the perfect all-rounder. It possesses the vibrant green color and smooth finish of a true ceremonial matcha but with a slightly bolder body. This makes it the ideal choice for lattes, as its flavor holds up beautifully when paired with milk or plant-based alternatives (like oat or almond milk).
Pro Tip: Regardless of which BLOOM matcha you choose, always whisk your powder with a small amount of 70-80°C water first to create a smooth paste before adding your milk. This ensures a clump-free, velvety latte every time.
